One small thing in the Helm’s Deep scene I love is when the Uruk Hai start bringing up ladders to climb the wall and Aragorn yells “Ladders!” in Elvish, and Gimli goes “Good!” So he could understand Aragorn when he spoke Elvish, and if he could understand the word “ladders” then he could probably understand a lot more. So that means he had either been picking up on it from Legolas and Aragorn or, even better, Legolas had been teaching him.
