As for the turning off the lightsaber thing, it is actually an in-universe technique called Tràkata. It’s just really difficult to master and suffers from the problem that you’ve got to turn the blade back on before the other guy cuts off your head.
With the PT Jedi being as risk-averse as they are, it should be little surprise that basically nobody uses it except one guy in the EU.
